Two civic bodies, one pest record
Since early 2026 Delhi has had two licensing regimes for restaurants.

FSSAI also inspects Delhi kitchens directly. In August 2026 its inspectors flagged cockroaches and inadequate pest control in the kitchens of two Aerocity five-star hotels and issued notices.
Whichever row applies, a dated pest-control file kept to FSSAI's standard serves both civic bodies. It shows what was done and when; nobody can promise how an inspection turns out.

What Delhi's food safety guidance asks of a kitchen
The Delhi Food Safety Department hosts a pest-control note for food businesses. Its practical points:
- Food stacked "above the ground and away from walls".
- Infestations dealt with "immediately".
- "Records of pesticides / insecticides used along with dates and frequency" kept on file.
- Insect electrocuting units placed at least 1.5 m from food handling areas.
- Door threshold gaps of no more than 6 mm, with metal kick plates or rubber sheets.
- Food covered while any treatment is going on.
The note asks for "a trained service provider". Our technicians use CIB&RC-registered products as per label and fill in the chemical log each visit. At the audit we measure door gaps and check where fly-catcher units hang: fixes a manager can make within a week.

Old buildings: treat the block, not only your unit
Chandni Chowk dates from 1650, and three paratha shops in Paranthe Wali Gali have traded since the 1870s and 1880s. Khan Market was built in 1951 as a U-shaped, double-storey market with flats above the shops, most later turned into shops. Hauz Khas Village fits around 50 restaurants, bars and cafés into one urban village.
Here walls, drains and shafts are shared, and a kitchen treated alone can pick up cockroaches from next door within weeks. So in older markets we:
- map shared walls, drain runs and shafts at the audit, not only the space inside your shutter;
- offer neighbouring units a visit on the same night, each with its own report and its own invoice;
- put rodent stations at the lane entry and on stairs, where rats move between floors;
- list gaps you may not own, like broken drain covers and open pipe entries, for the landlord.

When diners and dengue teams look
In a LocalCircles survey of more than 6,000 Delhi diners across all 11 districts, 53% said they had seen pests or insects at restaurants. It's a customer survey, not an inspection, but it's the same customer who takes a photo at the table.
The monsoon brings a second kind of check. In July 2023 the Delhi government announced fines of up to ₹5,000 for mosquito breeding found at commercial premises. In restaurants, look at terrace planters, cooler and AC drip trays, and buckets behind the kitchen. From July to October each visit includes a breeding-spot check, with fogging of outdoor seating after closing when needed.

The file you keep
Each visit leaves a dated report, a chemical log with CIB&RC numbers and the station map. Delhi outlets also get a one-page summary to file with the FSSAI licence and any civic trade licence you hold. Faults in shared parts of the building go on a landlord sheet.
